The recipe comes from BBC Good Food, but I made some very small changes. I also serves it with couscous instead, as that is the way we usually have it in my family.
Peel and chop the veggies. Heat the oil and fry the onion until it softens and then add the garlic and carrots. Add the rest of the vegetables, then the chickpeas, tomatoes and vegetable stock. Lastly, add the spices and seasoning and let the tagine simmer for a while. Meanwhile you can make the couscous, which takes 10-15 minutes.
