Summer Rolls with Carrot, Cabbage, and Apple Served with a Peanut Dip (Vegan/Plantbased)
This recipe is so easy, yet a very nice dish to serve as a snack or a starter. Using rice paper rolls and the vegetables and fruits of one's taste, roll them together and cut in half. I recommend using both vegetables and fruit, seeing that he fruits bring a sweetness to the rolls which is delicious. Here I used apples, because they bring an extra crunch to it.
I usually serve it with a peanut dip, made with peanut butter, tamari, garlic, chili, and dates.
