MANGO AND MOZZARELLA CAPRESE
As you already know by now, I try to stick to plant based eating habits (preferably whole foods plant based). Sometimes, however, I make exceptions. This dish is one example. It is so simple and delicious. I just cut up fresh mango and mozzarella, sprinkle some chilli flakes and coriander on top and serve. It might seem like a weird combination, but mango and mozzarella goes really really well together.
