Green Pea Soup with Spinach, Coconut and Cashews


As usual, I always keep my recipes very simple. I put everything except the cashews in the blender, when blended I added it to a pot and let it cook for a bit. I then added the cashews for some crunch. Don't forget to eat it with some bread, I ate it with a whole wheat bread with sunflower seeds from Kung Markatta.

1 can of coconut milk (400 ml)

1 yellow onion

1 garlic clove

300 g spinach

400 g green peas

100 g cashews
